Pecorino Sardo DOP is the iconic cheese of Sardegna, crafted from the milk of Sardinian sheep across the entire island. It comes in two distinct varieties: the "Dolce" (aged 20-60 days, smooth rind, delicate flavor) and the "Maturo" (aged at least 2 months, thick rind, intense and peppery taste).

Sardegna boasts a thousand-year cheesemaking tradition rooted in pastoral heritage: the island is home to more sheep than people (approximately 3 million). Pecorino Sardo Maturo is the shepherd's cheese, perfect for grating over pasta or savoring with pane carasau and honey.

Aging takes place in natural, cool and well-ventilated cellars. Each region of Sardegna imparts its own character: more delicate in Gallura, more robust in Barbagia.
