Cappero delle Isole Eolie DOP is cultivated on the volcanic terraces of the islands of Lipari and Salina. Considered the most flavorful in the world, it stands out for its intense aroma and perfect balance between salinity and freshness.
Caper plants grow spontaneously among volcanic rocks, benefiting from the sun, sea breeze, and mineral-rich soil. Harvesting takes place by hand between May and September, selecting the buds before they bloom.
The capers are preserved under sea salt, without vinegar, to preserve their authentic flavor. They are essential in Aeolian cuisine: in pane cunzato, in pasta con alici, in caponata, and in salads.
