Cioccolato di Modica IGP is the first and only chocolate in Europe with Protected Designation of Origin. Crafted using the "cold-working" technique—an ancient Aztec method brought to Sicily by the Spanish in the XVI century—it stands out for its distinctive granular texture on the palate: sugar crystals remain intact throughout the production process rather than melting.
The "cold-working" process takes place at temperatures no higher than 40°C, preserving the chocolate's organoleptic properties. The result is an opaque tablet with a rough surface that breaks cleanly and releases an explosion of flavors on the palate.
Traditional flavors include dark cocoa, cinnamon, vanilla, and chili pepper, while artisanal Modica chocolate makers experiment with citrus fruits, sea salt, carob, and pistachio. Modica celebrates its chocolate every year with ChocoModica.
