Pistacchio Verde di Bronte DOP, nicknamed "the green gold of Etna," is considered the most prized pistachio in the world. Cultivated on the slopes of the volcano between 300 and 900 meters above sea level, it grows in volcanic soil that gives it an intense emerald green color and an unmistakable aroma.
Harvesting takes place every two years, picked by hand to avoid damaging the fruit, between late August and early October. The plants, often centuries old, grow clinging to solidified lava in extreme conditions that concentrate flavor and essential oils.
In the kitchen, it is the star of desserts (granita, gelato, cannoli, pastries), pestos, creams, and savory preparations. Pistacchio di Bronte has conquered Michelin-starred kitchens around the world.
