Canederli (Knodel in German) are the most representative dish of Trentino-Tyrolean cuisine: large bread dumplings made with stale bread, eggs, milk, and speck, the size of oranges, served in broth or dry with melted butter and grated cheese.
Born as a dish born from resourcefulness to use leftover bread, Canederli have become the symbol of alpine border cuisine. Endless variations exist: with speck, cheeses, spinach, porcini mushrooms, and even sweet versions with apricots or plums.
Every Trentino mountain hut has its own secret recipe, passed down from mother to daughter.
