Graukäse is a traditional cheese from Val di Vizze in Trentino-Alto Adige, representing an authentic expression of Tyrolean cheesemaking culture. Made from partially skimmed cow's milk, it features a distinctive grey coloration created by natural moulds that develop during aging. It is a lean cheese with compact cylindrical forms, protected by Slow Food Presidio status, which safeguards its production according to historical methods.
Its sensory characteristics are remarkably original: the paste is hard and crumbly, with a decided flavour and slightly pungent notes, sometimes with salty undertones and a hint of spiciness. The natural rind displays that characteristic grey-greenish appearance, a sign of its natural aging process. On the palate, intense and complex aromas emerge, typical of controlled fermentation.
