Puzzone di Moena

Puzzone di Moena DOP (Spretz Tzaori in Ladin, meaning "flavorful cheese") is a semi-hard cheese with a washed rind, produced in the valleys of Fassa, Fiemme, and Primiero. The name "puzzone" comes from the intense and pungent aroma of the rind, which is washed periodically with warm water during the aging process.

Made with whole raw cow's milk, it ages for at least 90 days. The rind is moist with an orange-reddish color; the paste is soft and elastic, featuring irregular eyes and a surprisingly sweet and enveloping flavor that contrasts beautifully with its strong aroma.

A Slow Food Presidium until it obtained DOP status in 2014, Puzzone di Moena is today one of the most sought-after cheeses from Trentino.
