Trentingrana is the local designation for Grana Padano DOP produced exclusively in Trentino, made from the milk of cows fed on mountain hay. It stands apart from lowland Grana Padano for its more intense and aromatic flavor, a characteristic linked to the Alpine flora.
The wheels, weighing approximately 35 kg, are aged for a minimum of 18 months in natural environments. The paste is granular and crumbly, with a deep straw color and an aroma reminiscent of alpine butter and mountain herbs.
It is the quintessential cheese for grating over canederli, strangolapreti, and other traditional Trentino dishes.
