Trentingrana is a hard-paste cheese with Protected Designation of Origin (PDO) status, produced exclusively in Trentino from the milk of cows raised within the region. Its production follows traditional methods that guarantee quality and authenticity, using only local milk subject to rigorous controls.
It presents itself with a compact and homogeneous paste, characterized by a straw-like color that reflects the use of fresh milk. The flavor is bold and complex, with slightly salty notes that develop over time: the cheese is indeed marketed at various stages of aging, from the younger and more delicate versions to the more intense and crystalline ones. The texture is crumbly and melt-in-your-mouth, characteristic of long-matured cheeses.
In the kitchen it proves versatile: excellent to enjoy in flakes or small pieces as a snack, perfect grated over traditional Trentino dishes, risottos, and pastas. Its structure makes it ideal for accompanying cheeses and cured meats on a board, pairing well with local wines and honey.
