Ponce alla livornese is a traditional hot beverage from the Etruscan Coast, perfect for winter evenings. Born from the maritime tradition of Livorno, it combines the warmth of coffee with the bold character of dark rum and the freshness of lemon zest, creating an elegant and comforting drink served in the classic glass.

Preparation

  1. 1

Prepare the espresso coffee very hot using a coffee maker or moka pot.

  2. 2

In a small saucepan, heat the water together with the sugar, stirring until completely dissolved.

  3. 3

Add the rum to the sugar and water syrup, bringing everything to a moderate heat without boiling.

  4. 4

Using a thin vegetable peeler, remove the zest from 2 lemons, avoiding the bitter white pith.

  5. 5

Pour the hot coffee into the glass cups already prepared.

  6. 6

Add the rum and sweetened syrup mixture to the coffee, stirring well.

  7. 7

Decorate each glass with a strip of fresh lemon zest, stirring gently to release the essential oils.

  8. 8

Serve immediately, strictly in glass cups to appreciate the amber color of the beverage.

Chef's Tips

The rum should never boil to keep the aromas intact. The lemon zest should be added at the moment of serving to guarantee maximum freshness and fragrance.
