Schiacciata alla Fiorentina

Schiacciata alla Fiorentina is the traditional Carnival sweet of Florence: a soft and fragrant orange-infused sponge cake, kept low and dusted with powdered sugar with the Florentine lily stamped in cocoa. Light and delicate, it can be found in all Florentine pastry shops in February.

Not to be confused with Schiacciata all'uva from September.

Preparation

    Whisk the eggs with sugar until pale and fluffy.

    Add the oil, milk, and grated orange zest.

    Gently fold in the sifted flour and baking powder.

    Pour into a shallow rectangular baking pan (30x40 cm) lined with butter.

    Bake at 170°C for 25-30 minutes.

    Dust with powdered sugar and decorate with the Florentine lily in cocoa using a stencil.

Chef's Tips

Schiacciata alla Fiorentina should be low (2-3 cm) and soft. The olive oil makes it wonderfully tender. The orange aroma is essential.
