Pecorino di Pienza is a Traditional Food Product (PAT) from Tuscany, crafted from sheep's milk using time-honored artisanal methods. For centuries, its production has defined the Val d'Orcia region, a territory renowned for the quality of its pastures and cheesemaking heritage. The cheese boasts a compact paste with a straw-yellow hue, presenting an intense and penetrating aroma typical of aged ovine cheeses.

Aging is the defining element of this product: Pecorino di Pienza is traditionally matured wrapped in walnut leaves, which impart a complex and slightly tannic aromatic profile to the cheese, or stored in caves where the natural environment fosters a balanced development of flavors. The texture is compact and crumbly, with a decisive taste that intensifies as the aging process continues.

In the kitchen, Pecorino di Pienza is enjoyed both as a cheese course, accompanied by honey or dried fruit, and grated over traditional Tuscan pasta and soups. Its versatility makes it equally suited to pairings with toasted bread and medium-bodied local wines.
