The Sagra dello Spaghetto dei Carbonai is an unmissable event for those wishing to immerse themselves in Umbrian traditions and savour authentic peasant cuisine. Now in its 49th edition, this festival takes place in Fratticiola Selvatica, a small hamlet in the Municipality of Perugia that owes its historical identity to the charcoal makers—artisans who once produced charcoal in the surrounding forests. Over ten evenings, from 17 to 26 July 2026, the village transforms into a showcase of flavours and traditions, where spaghetto alla carbonara is the emblematic dish of the celebration, accompanied by other local specialities such as beans with pork rinds and braised lamb. Yet the Sagra dello Spaghetto dei Carbonai is far more than gastronomy: it is a genuine journey through time celebrating the historical roots of this community. Among the most captivating moments are the Mule and Pack Horse Exhibition, where these working animals are honoured for their historical importance, and the traditional Palio del Carbonaio—a medieval jousting competition where riders from seven districts challenge each other on mulebacks. The reenactment of the Cotta di Carbone, the original charcoal-making technique, releases a distinctive aroma that envelops the entire village, transporting visitors to an authentic and evocative atmosphere. Every evening, the festival comes alive with live music and DJ sets at the food stalls, creating an experience that blends culinary tradition, folk culture, and entertainment.
