Lenticchia di Castelluccio di Norcia is a small legume of extraordinary quality, cultivated on the homonymous plateau at approximately 1,400 meters altitude in Umbria. The volcanic soil and climate of the area bestow upon this product unique organoleptic characteristics: the seeds maintain their shape intact during cooking and develop a delicate yet deeply distinctive flavor.
The lentil stands out for its uniform and brilliant color, available in various shades ranging from green to reddish-brown depending on the variety. In the kitchen it is versatile and appreciated both in traditional peasant dishes and in more refined preparations: from the classic ‹orzotto alle lenticchie› to autumn soups, right through to modern dishes where its firm consistency and balanced taste find space to shine.
The IGP recognition testifies to the importance of geographical origin: lentils cultivated on the Pian Grande of Castelluccio represent an excellence of Italian agricultural tradition and a characteristic element of Umbrian cuisine.
