
Cjarsons della Carnia
Cjarsons are the ravioli of Carnia, unique in the world for their sweet-savory filling that varies from valley to valley: potatoes, herbs, ricotta, chocolate, cinnamon, and raisins. Dressed with melted butter and grated smoked ricotta.
Every Carnic family jealously guards its own recipe for the filling.
Preparation

Prepare the pasta dough with flour, eggs, and water. Let rest for 30 minutes.

Boil the potatoes and mash them. Mix in ricotta, mint, cinnamon, raisins, and cocoa.

Roll out the dough and cut into 7 cm discs.

Fill with the sweet-savory mixture and fold into half-moon shapes.

Cook in salted water for 4-5 minutes.

Dress with melted butter and grated smoked ricotta.

The sweet-savory filling is the secret to cjarsons: don't be afraid to mix cocoa, cinnamon, and potatoes. Smoked ricotta is irreplaceable.
