Pallotte Cace e Ove (cheese and egg meatballs) are a "lean" dish from Abruzzo's culinary tradition: meatless meatballs made only with cheese, eggs and bread, cooked in tomato sauce. A traditional dish for Lenten days.
In the Peligna Valley, they are the signature dish of Fridays and religious celebrations.
Preparation

Soak the bread in water and squeeze it out. Crumble into small pieces.

Mix with eggs, pecorino, Parmigiano, chopped parsley and garlic.

Form meatballs and fry them in oil until golden brown.

Prepare the sauce with peeled tomatoes and oil.

Cook the meatballs in the sauce for 15 minutes.

Serve with sauce and bread.

Chef's Tips
The meatballs must be compact so they don't fall apart in the sauce. Generous cheese is the secret. A lean dish, but full of flavor.
