Sagra della Salsiccia a catena di Cancellara (Chain Sausage Festival)

The charming Lucanian village of Cancellara hosts the Sagra della Salsiccia a catena, a festival dedicated entirely to one of the most iconic delicacies of local culinary heritage. The chain sausage is crafted according to an ancient recipe using prime pork, wild fennel seeds, lard, and chili peppers, encased in natural casings and bound into a distinctive chain of links from which it takes its name. Throughout the event, the streets of the historic town center come alive with food stalls offering the cured specialty sliced or grilled to perfection, accompanied by traditional side dishes and local wine.
