
Pampanella di San Martino in Pensilis
Pampanella is a fiery pork dish from San Martino in Pensilis: slices of pork marinated with strong chili pepper, garlic, and vinegar, then roasted in a wood-fired oven. The result is meat with a vibrant red color and an incredibly intense flavor.
A traditional dish served at the local patron saint festival and during Molisan Carnival celebrations.

Cut the meat into thick slices about 2 cm thick.

Prepare the marinade: mix the chili powder, minced garlic, vinegar, and salt.

Massage the meat with the marinade and let it rest for 4 hours.

Arrange the slices in a baking pan.

Roast in a 180°C (350°F) oven for 50-60 minutes.

Serve hot or at room temperature.
Chef's Tips
Molisan chili pepper is unique: sweet and spicy at the same time. The long marinating time is essential for developing the authentic flavor. Pampanella is also delicious served cold.
