
Paposcia di Vico del Gargano
Paposcia is an elongated flatbread typical of Vico del Gargano, the "town of love" with its famous Vicolo del Bacio. Crispy on the outside and soft on the inside, it is cut in half and filled with local ingredients.
It's the ultimate street food of Gargano, to be enjoyed while strolling through the narrow streets of the historic center.
Preparation

Mix the semolina with water, yeast, salt, and oil for 10 minutes.

Let rise for 2 hours covered.

Divide into 4 pieces and shape into elongated forms (about 25x10 cm).

Bake in the oven at 250°C for 12-15 minutes until golden brown.

Cut horizontally in half and fill with cherry tomatoes, arugula, caciocavallo, and prosciutto crudo.

Serve immediately.
Chef's Tips
The paposcia must be hot when filled so the cheese softens. The oven must be very hot to achieve the crispy exterior.
