Caciocavallo Podolico del Gargano DOP is a stretched-curd cheese produced with milk from Podolica cattle raised freely grazing in the Gargano promontory. The Podolica is a rustic breed that roams freely among woods and pastures, producing small quantities of milk but of exceptional quality.
Production is carried out by hand: the milk is coagulated, the curds are stretched in boiling water and shaped into the characteristic pear form. Aging lasts from 3 to 18 months and takes place hanging in ventilated rooms.
The result is a cheese with an intense flavor, slightly spicy, with herbaceous and hazelnut notes. A rare and precious product that captures the wild soul of Gargano.
