The Cipolla Rossa di Acquaviva delle Fonti is a sweet and crispy onion with a flat shape and an intense reddish-purple color. Cultivated in the red earth of the municipality of Acquaviva delle Fonti, in the province of Bari, this onion stands out for its almost complete absence of pungency.
A Slow Food Presidium, its cultivation follows traditional methods with natural irrigation. Harvesting takes place in summer and the onion can be stored for several months.
It is ideal eaten raw in salads, grilled, or as an ingredient in focaccia barese.
