Olio Collina di Brindisi DOP is an extra virgin olive oil produced in the hills of Brindisi province, in Puglia. The origin area, characterized by a Mediterranean climate and particularly suitable soils, allows for the cultivation of local olives that give the product a delicate and balanced organoleptic profile. Harvesting takes place mainly between autumn and early winter, the period when olives reach the optimal maturity level for this style of oil.
It presents itself with a golden-yellow color, with greenish reflections of varying intensity depending on the harvest time. The sensory profile is characterized by a fresh and floral fragrance, with delicate notes of grass and almond, while on the palate it is soft, round and free from harshness. The texture is fluid and the balance between acidity and aromatic complexity makes it particularly versatile.
