The protected designation includes three distinct sub-zones: Castel del Monte, Bitonto, and Murgia dei Trulli, each characterized by specific soil and climate conditions that impart unique organoleptic properties to the final product.

Obtained from olives cultivated according to DOP regulations, this oil displays a color ranging from golden yellow to deep green, depending on the production zone and harvest timing. On the nose, it reveals a complex aromatic profile with herbaceous and fruity notes, while on the palate it stands out for its balanced structure, with a subtle peppery finish and a persistent aftertaste.
