Festa della Finocchiona e dei Salumi Toscani

On Sunday, May 17th in Bivigliano, a hamlet of Vaglia in the province of Florence, the Festa della Finocchiona e dei Salumi Toscani returns for its seventh edition. This celebration showcases Tuscan gastronomic traditions, with finocchiona taking center stage—the renowned cured meat flavored with fennel seeds that recently earned the prestigious IGP label (Protected Geographical Indication). This recognition reflects the excellence and authenticity of this product, a symbol of the region's rich culinary heritage. The festival transforms the streets of Bivigliano into a sensory journey brimming with gastronomic delights.
