From April 25 to May 3, this Tuscan territory celebrates one of its most precious vegetables: the Empolese artichoke, a unique and fascinating variety with a history spanning more than two centuries. Known since the 19th century, this artichoke stands out distinctly from the more common purple variety, characterized by a late harvest season extending from March to June and a complete absence of thorns, a quality that makes it particularly prized in the kitchen.
