Sagra della trippa (Tripe Festival)

In the heart of Massa, the beloved Sagra della trippa returns to celebrate the rustic, hearty, and authentic flavours of northern Tuscany. The star of the festival—tripe—is prepared strictly according to traditional recipes, simmered slowly with tomato, aromatic herbs, and white wine to achieve a wonderfully tender texture and rich taste. Beyond tripe, the open-air food stalls serve a wide array of local specialities, including handmade Massa-style tordelli (meat-stuffed ravioli), refreshing panzanella salad made with Tuscan bread and crisp summer vegetables, flavourful grilled sausages, and homemade desserts.
