Ribollita, one of Tuscany's most iconic dishes, takes center stage at the 14th edition of the festival dedicated to this culinary masterpiece. From July 17-19, 2026, in Ribolla in the municipality of Roccastrada, food stalls will welcome visitors to discover the authentic traditional recipes of this bread and vegetable soup, prepared according to the historic local recipe that gives it its distinctive, unmistakable flavor. Beyond the celebrated ribollita, the festival offers other Tuscan specialties including tortelli in three irresistible variations: with ragù, alla boscaiola, or with butter and sage. Every evening from 7:30 pm onwards, the stalls remain open for dinner, creating a convivial atmosphere where you can savor the genuine flavors of regional culinary tradition. Organized by the Pro Loco of Ribolla in Piazza della Paga, the event extends beyond food: evenings come alive with live music and dance performances that transform the festival into an occasion of celebration and entertainment. Three perfect days to immerse yourself in authentic Tuscan flavors and atmosphere.
